At Nokto Restaurant, preparing goose is an art—a meticulous process that honors traditional techniques handed down through generations while incorporating the chef’s contemporary twist. For this unique culinary adventure, we joined forces with Warsaw's favorite local explorer, Karolina from @meet.me.in.warsaw, to share our passion for this beloved Polish dish.

In the kitchen with Chef Krzysztof, Karolina uncovered the secrets of crafting the perfect goose—from brining and stuffing to slow-roasting and making a rich, flavorful sauce from scratch. She also learned that no two geese roast the same!

Can’t make it to Warsaw? Bring a taste of Poland to your own table with our Traditional Goose Recipe—a culinary invitation to relive the flavors of history in your home.

RECIPE:

• 1 whole goose (approx. 3.5 kg)

Brine:

• 300g salt
• 10l water
• 2.5g allspice
• 1g bay leaves

For the Filling:

• 2 apples, quartered
• 2 oranges, quartered
• 2g thyme
• 2g marjoram
• 5g salt

Sides:

• 400g potato dumplings
• 400g boiled potatoes with parsley
• 400g red cabbage with apples and red wine
• 300ml goose sauce (made from drippings, herbs, roasted goose wings, and white wine)

Preparation:

1. Brine the Goose: Place the goose in the brine and let it marinate for 12 hours.
2. Prepare the Filling: Stuff the goose with apples, oranges, thyme, marjoram, and salt.
3. Roast the Goose: Preheat the oven to 150°C and roast the goose for 1 hour. Lower the temperature to 120°C and continue roasting for 2 hours, checking the tenderness.
4. Make the Sauce: Use the drippings, roasted wings, herbs, onions, and white wine to create a rich sauce.
5. Serve: For an authentic Polish feast, pair the roasted goose with potato dumplings, boiled potatoes, stewed red cabbage, and goose sauce.
