The Gourmet Experience i’ve been waiting for. The new design and friends created a nice atmosphere but the real test is the taste.
It was incredibly delicate, smelling faintly of the ocean but with zero "fishiness."
Carpaccio simply dissolved on the tongue. It is rare to find fish sourced with this level of scrutiny—you can tell the chefs at Hikari have distinct relationships with their suppliers. It's a must go.
