Second Edition of the Exclusive Istrian Dinner Series

The Sophia restaurant hosted the second edition of the Exclusive Istrian Dinners, an event created by Arena Hospitality Group and AZRRI to celebrate the culinary heritage of Istria through fine dining. Following the successful June premiere, this edition focused on young Istrian lamb, one of the region’s most prized native ingredients. Celebrated chef Zdravko Tomšić and acclaimed pastry chef Robert Perić crafted a refined five-course menu that highlighted the ingredient’s purity, tenderness, and deep connection to Istria’s unique terroir.

Tomšić emphasized that young Istrian lamb has the potential to become a new regional gastronomic brand, reflecting traditional grazing, indigenous herbs, and sustainable local farming. Perić contributed the visually striking dessert Terra Rossa, inspired by Istria’s red soil and featuring jujubes, white chocolate, sheep’s cheese, and beetroot.

With two successful editions completed, the series will continue to explore new Istrian ingredients, chefs, and themes, further shaping the region’s distinctive gastronomic identity.

Premiere of the “Istrian Dinners” Culinary Series at Sophia Restaurant

At the elegant Sophia restaurant of Grand Hotel Brioni Pula, the premiere of a new culinary series, “Istrian Dinners”, marked the beginning of a refined gastronomic journey celebrating the region’s heritage. Organized by Arena Hospitality Group and the Istrian Agency for Rural Development (AZRRI), the project showcases the richness of authentic Istrian ingredients through contemporary fine-dining interpretations. The inaugural event gathered around forty guests, including media, partners, and local representatives, who enjoyed a menu crafted by Michelin-starred chef Goran Kočiš, featuring signature preparations of boškarin and young Istrian milk-fed lamb.

Drawing on AZRRI’s long-standing commitment to preserving indigenous breeds, the series elevates traditional Istrian cuisine to a luxurious level, strengthened by Grand Hotel Brioni’s ongoing collaborations with Michelin-star chefs. The evening highlighted the synergy between local producers, premium hospitality, and cultural identity, with pairings from Damjanić wines and Chiavalon olive oils.

With four to five editions planned annually—each with a new chef and seasonal theme—Sophia restaurant is positioning itself as a leading destination where Istrian authenticity meets culinary innovation.

Prosecco DOC MAXI ON Cooking Star 2024

Grand Hotel Brioni Pula, A Radisson Collection Hotel, hosted the spectacular Prosecco DOC MAXI ON Cooking Star 2024, an event that seamlessly combines elite sailing with world-class gastronomy. The day began on the Adriatic with a fleet of Maxi sailboats, followed by an extraordinary culinary showcase led by award-winning chefs whose precision and creativity mirror the elegance of the regatta itself. Michelin-starred and Gault&Millau-recognized chefs, including Nikola Laera, Felice Lo Basso, Alessandro Gavagna, Salvatore Bianco, Alessandro Rossi, Fabio Groppi, and Croatia’s own Floriana Ružić, transformed local ingredients into seven exceptional seafood-focused dishes.

A distinguished jury of chefs, sailing experts, and gastronomic authorities evaluated the creations, ultimately awarding Salvatore Bianco the top prize, while the honorary jury recognized Alessandro Rossi. Arena Hospitality Group’s CEO, Reli Slonim, presented Rossi with a special Grand Hotel Brioni stay.

Celebrating sport, cuisine, and the beauty of Istria—from Rovinj to Pula—the event continues to strengthen the region’s reputation for unique, high-end experiential tourism.
